Tex-Mex Ranch Chicken

I have always loved tex-mex kind of dishes. A little spicy, a little cheesy. Plus I have always loved sauces and dips and things like that. Sadly though a lot of that time that means lots of fats, calories, and carbs. 

Solution?

My tex-mex ranch chicken recipe. So easy to make and very tasty. You can serve it over greens/salad. You could have veggies and quinoa or rice on the side. Prep takes only 5 minutes and bakes in about 35.

On the 21 Day Fix this meal would account for:
2 Green (greens, carrots, tex-mex sauce)
1 Red (chicken)
1 Blue (cheese)
1 Orange (ranch)
STEPS:

Step 1: Preheat the oven to 350
Step 2: Make the tex-mex sauce (recipe below)
Step 3: Pour sauce over chicken
Step 4: Shred cheese
Step 5: Sprinkle cheese over chicken
Step 6: Bake in oven for 35 minutes
Step 7: Plate over greens or with chosen sides and put rockin' spicy ranch on top (link to recipe below) 

Tex -Mex Sauce 
In a saucepan over medium heat combine the following:
1 can tomato paste
1/2 cup water
1/2 tsp sea salt
1 tsp chilli powder
1/2 tsp cumin
1/4 cup finely chopped green pepper

Warm until just simmering.

Lemon Ginger Sauce

The other day I made a super nummy lemon ginger chicken. Paired up with some veggies and basmati rice and it makes a perfectly balanced meal.




Lemon Ginger Sauce 
1/3 cup coconut aminos
1/4 cup water
juice of 1/2 lemon
1 clove garlic finely minced
1/2 thumb size piece of ginger finely minced
1/2 med onion diced or sliced thinly 
2 tsp arrowroot powder

Mix all the ingredients in a bowl and let those flavours meld while you fry up some pieces of chicken. When chicken is just about finished pour the sauce in and simmer for about 5-10 minutes, until thickened.

For my veg I like to steam carrots and broccoli until tender crisp and then toss them with the chicken and sauce. If you'd like to do celery you could toss it in with the chicken shortly before the sauce, same with bok choy.

I think I may just have to make this sauce again tonight, perhaps see if I can tweak it into a ginger beef recipe.

Herb and Garlic Roasted Pork Tenderloin

Pork tenderloin is a great inexpensive cut of meat and something I make quite often. While making it for supper tonight I figured I would share with you one of my favourite recipes for making it. It is easy, quick, and super tasty. Enjoy!






For this Pork Tenderloin Recipe you will need:
Pork Tenderloin (usually vacuum sealed in a 2 pack)
1 tsp onion powder
1 tsp garlic powder
1 tsp dried parsley
1 tsp dried basil
roughly 1/2 tsp seat salt
roughly 1/2 tsp pepper
1 tbsp olive oil


Put the tenderloins into your roasting pan and sprinkle all the spices and oil and such over it. Using your hands make sure everything is spread over well. 




Then place them into a hot pan (at medium heat) on your stove and sear all sides. 





Put the seasoned and seared tenderloins back into the roaster. Put the the lid on. Roast in the oven at 375' for 30-35 minutes. 

Let tenderloin sit for 5 minutes after taking it out of the oven. 

Don't they look beauty??


Slice it and serve it up with two veggies and a clean carb (tonight we had a mix of broccoli/cauliflower and peas with basmati rice).
